Fresh off the grill: Easy recipes for a flavorful spring

As the weather heats up, it’s time to move mealtimes outdoors and fire up the grill!  Whether you’re hosting a backyard barbecue or needing a quick, tasty family dinner, these simple recipes are sure to please and have everyone asking for seconds. Grab your tongs and prepare to make something delicious!

ZESTY GARLIC-LIME SHRIMP SKEWERS

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh cilantro for garnish

Instructions:

  • Preheat the grill to medium-high heat.
  • In a bowl, toss shrimp with olive oil, garlic, lime juice, paprika, salt and pepper.
  • Thread shrimp onto skewers and grill for two to three minutes per side until pink and slightly charred.
  • Garnish with fresh cilantro and serve with lime wedges.

 

HONEY-ORANGE GLAZED GRILLED CHICKEN

Ingredients:

  • 4 boneless, skinless chicken breasts
  • ¼ cup orange juice
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper

Instructions:

  • In a bowl, whisk together orange juice, honey, soy sauce, Dijon mustard, garlic powder and black pepper.
  • Marinate the chicken in the mixture for at least 30 minutes.
  • Preheat grill to medium heat and cook chicken for five to seven minutes per side until cooked through.
  • Brush with extra glaze before serving.

Tips for grilling like a pro:

  • Always preheat your grill for at least 10–15 minutes before cooking to ensure even heat distribution and those perfect grill marks.
  • Prevent sticking by lightly oiling the grates with a high-smoke-point oil (like canola or avocado oil) before placing your food on the grill.
  • Avoid overcooking by checking the internal temperature of meats—165°F for chicken, 145°F for beef, pork, and fish.
  • Allow grilled meats to rest for a few minutes before slicing to keep them juicy and flavorful.
  • Keep a spray bottle of water handy to control flare-ups and prevent charring!
