Ready to put your grilling skills to the test? Try your hand at these delicious grilled mushrooms from Joy Monnerjahn, the owner of The Bayou Belle, which make a great appetizer or meal that will please meat lovers and vegans alike (just switch the butter for your favorite oil)! The recipe makes about eight mushrooms.
INGREDIENTS
- Two sticks of butter
- Two tablespoons parsley
- 1 teaspoon thyme
- 1 tablespoon Slap Ya Mama Cajun seasoning (or your favorite Cajun seasoning)
- ½ tablespoon paprika
- ½ teaspoon garlic powder
- Eight portabella mushrooms
DIRECTIONS
- Melt the butter in a bowl. Mix all the ingredients together and pour into the mushroom cap.
- Grill as shown — no need to even flip. This way, the butter melts into the mushrooms, and you keep the great flavor.
Pro tip: I like to keep the heat low on the grill so the mushrooms will slowly cook and keep the flavor of the butter and seasoning. If your grill gets too hot, it can char the mushroom, which you want to avoid.
- Grill until tender.
